- 1 cup buttermilk

- Zest of 1 orange
- 2 tbsp vegetable oil

- Sliced or halved strawberries

1. Make the batter
In a bowl, whisk together the egg, flour, buttermilk, sugar (if using), and orange zest until smooth. Let the batter rest for 20–30 minutes.
2. Cook over the fire or camp stove
Heat a lightly oiled non-stick pan or griddle over medium heat. Drop tablespoons of batter into the pan and cook for 2–3 minutes per side, or until golden and cooked through.
3. Create your bunny faces
Place one pikelet on a plate as the face. Cut another in half and position them as bunny ears. Add small dollops of yoghurt for eyes and a nose, then decorate with fruit and apple matchsticks for whiskers.
