Corn and Sweet Potato Chowder

Corn and Sweet Potato Chowder

Serves: 4-6
Preparation time: 10 minutes
Cooking time: 20 minutes

Ingredients:

  • 4 bacon strips, chopped into small pieces
  • 1 white onion, medium, chopped or diced
  • 6 sweet potatoes, peeled and diced
  • 2 cans whole kernel corn
  • 1 can cream of corn
  • 1 cup water Salt and pepper

Instructions:

  1. In a soup pot or deep skillet, cook the bacon.
  2. Add the onion and cook until the onion is transparent.
  3. Add the water and the juice from the cans of kernel corn, let it boil.
  4. Once the liquid is boiling, add the sweet potatoes and cook until the potatoes are tender.
  5. Add the kernel corn and cream of corn.
  6. Season with salt and pepper.
