There’s nothing better than waking up at camp to a hot, filling breakfast. These camping breakfast burritos are quick to make, packed with flavor, and super satisfying after a night outdoors. Loaded with savory sausage, fluffy scrambled eggs, crispy potatoes, and melty cheddar cheese, they’re the perfect way to fuel a day of hiking, fishing, or exploring.

Even better, you can make them ahead of time and simply warm them over the campfire when you're ready to eat.

Ingredients

Main Ingredients

  • 4 large flour tortillas

  • 4 large potatoes, diced

  • 1 lb sausage

  • 8 eggs

  • 1–1½ cups grated cheddar cheese

  • ½ tsp salt

  • ¼ tsp pepper

Optional Toppings

  • Green onions, sliced

  • Salsa or hot sauce

  • Sour cream

  • Fresh cilantro

Instructions

1. Cook the Sausage

Brown the sausage in a large pan over medium heat for 8–10 minutes, breaking it apart as it cooks. Remove and set aside.

2. Cook the Potatoes

In the same pan, cook the diced potatoes until golden and crispy, about 10–12 minutes. Add a little oil if needed and season with salt and pepper.

3. Scramble the Eggs

Beat the eggs with salt and pepper, pour into the pan with the potatoes, and cook until scrambled and fully done, about 4–6 minutes.

4. Mix and Add Cheese

Return the sausage to the pan and mix everything together. Sprinkle the cheddar cheese on top and let it melt.

5. Build the Burritos

Add the filling to each tortilla, fold the bottom up, tuck in the sides, and roll into burritos. Wrap in foil.

6. Serve

Enjoy hot with toppings like green onions, salsa, sour cream, or cilantro.

Pre-make the burritos and store them in a zip-top bag or airtight container. Reheat them on a campfire grate (not direct flame) for 10–15 minutes, turning often.
